These delicious Coconut Snowballs are the perfect treat for Christmas time. You can use it as a teachers gift, add it to your Christmas dessert or just have it around for when that sweet craving strikes. When I saw this recipe in the December issue of Ideas magazine I just knew I had to try them

230g Icing Sugar
1ml Cream of tartar
1 can condensed milk
270g Fine desiccated coconut
200g White chocolate chopped
80g medium desiccated coconut
Sift the icing sugar and cream of tartar together
Add the condensed milk and stir until smooth. Add half the fine coconut and mix well
Add the other half of the fine coconut and stir well until mixture sticks together. Set aside for 30 minutes
Roll into small balls and place the balls onto a greased and lined baking tray.
Melt the chocolate in a glass bowl over a saucepan of gently simmering water. Stir until smooth. Dip each coconut ball into the melted chocolate so that half of the ball is covered.
Allow the excess chocolate to run off and then dip into the coarse coconut.
Place balls on the lined baking tray and leave until the chocolate has hardened. Store in an airtight container.
